This August, I spent some time on a silent meditation retreat at a Buddhist Center in the Blue Ridge mountains of North Carolina. While the focus of such an endeavor wasn't really food, mealtime was an integral part of putting the Buddhist principles into practice: I ate mindfully; took only what I needed; prepared everything with love and intentionality, and let nothing go to waste.
As such, the most simple salad became an elevated experience-- every carrot round, every shredded beet and every torn leaf of lettuce a chance to connect to the greater whole.
The refuge's signature salad dressing, unassumingly called Hollyhock sauce, played a large part in transporting my salad and my spirit. It has just the right umami, a smooth light quality, and an ability to compliment any vegetable I've tried it with.
Now back in the "real" world, this dressing has become my mealtime reminder of the lessons learned at the refuge and one of the tangible ways I could bring the experience home and share it with others.
Ingredients:
1/3 C water
1/3 C Braggs amino (Refuge used tamari)
1/3 C apple cider vinegar
1 C nutritional yeast
1 C olive oil
Garlic powder to taste (optional)
Directions
Blend until smooth. Should be stored at room temperature.
